Thin-fully Delicious Shrimp

2 pounds H-E-B cooked shrimp, peeled, deveined, thawed
1―16 ounce jar Michael Flores Thin-fully Delicious Pickles, drained (save the liquid for another recipe)
Leaves of one bunch of flat leaf parsley, rinsed and dried
2 teaspoon Creole/Cajun seasonings
1/3 cup mayonnaise


Place all ingredients – except shrimp – in a food processor and pulse until well combined. Toss with shrimp and refrigerate several hours to overnight.
This shrimp is delicious by itself, served on top of Bibb lettuce for a salad, in a flaky croissant for a sandwich, or in phyllo cups for an elegant hors d’oeuvre.
